We have an overabundance of zucchini right now and I have been having fun finding ways to use it. After I made some zucchini bread, I had a little bit of leftover shredded zucchini that I decided to save for who knows what. Later on, a light bulb went off and I thought–why not throw some in a smoothie?! The kids gobbled it up and didn’t think twice about how many nutrients were in that delightful drink.
I don’t really use any recipes with smoothies–I recommend just going with what you have on hand. Here is the gist of this smoothie concoction:
- frozen pineapple
- frozen oj
Hooray for easy ways to get veggies into my kids (and me)!
