Zucchini Madness

It’s one of my favorite times of the year — summer vegetable season!  We always have a ton of zucchini and here are a few ways I have used it:

Zucchini Boats
(Zucchini, couscous with spinach, corn, and garlic, topped with cheese)
Zucchini, Tomato, Eggplant Casserole
(Zucchini, tomato, eggplant, mozzarella, Parmesan, seasonings and oil)
Zucchini Smoothies
(Zucchini, banana, spinach, frozen pineapple, frozen OJ, water)

I am definitely one to get stuck in a food-rut, so having fresh vegetables available is a good way for me to get creative with my food.  I hope you are enjoying summer meals, too!
